Vegetable Stir-Fry with Microgreens

This is easy and you can swap out the beef for your meat of choice or tofu. It is also a great way to use meat leftovers you may have.




1. Either grill or bake a beef tenderloin, meat of your choice, or retrieve your baked chicken from last night's dinner. Cut it into bite-sized pieces.


2. In a large pan, heat a drizzle of oil over medium-high heat.


3. Add the meat, a handful of microgreens (such as peas or kale), and your favorite stir-fry vegetables (such as bell peppers and onions).


4. Add a sauce ( soy sauce, hoisin sauce, or peanut sauce) and cook until the vegetables are tender. Serve over rice or quinoa.


5. Enjoy!
