Need a weekend breakfast idea? Sauteed Microgreens with Eggs is a favorite in our house. The best part is - it's easy too!
1. In a skillet, heat a drizzle of EVOO over medium heat. Though, I do love using butter too.
2. Add a handful of chopped microgreens, and cook until slightly translucent/ a little wilted.
3. either crack in a couple of eggs and scramble until cooked to your liking with the micros OR cook some over easy eggs place your cooked micros on top.
4. If you are feeling extra fancy, serve with toast or a side of potatoes.
My personal favorite is scrambled eggs with sauteed red onion, radish microgreens, tomatoes and feta served with some garlic sour dough toast.
